The Two Week Cupboard Challenge!

In less than two weeks, Mike and I are moving. Both the apartment and the house are a total disaster and I'm coming to the realization that everyone comes to when they move... I have WAY too much stuff. My cupboards and the freezer are no exception. So, in honor of our upcoming move, I've decided that we need to eat/ use as many things as we can from our cupboard.

Cupboards Stuffed Full!

When I first went gluten free, one thing my mother and future mother-in-law would do is buy me baking mixes. Lots and lots of baking mixes. I now have an unholy amount of pizza crust mix, brownie mixes and two bags of Bob's Red Mill Cinnamon Raisin Bread Mix. We also have more rice and gluten free grains than I really know what to do with along with the remnants of things we needed once for one recipe or another. 

So Many Mixes!

Here's what has been hiding in my cabinets, (an abbreviated list):

Regular Raisins 
Golden Raisins
Dried Bananas
Walnuts
Almonds
Hazelnuts
Pistachios
Honey
Big bag of dried lentils
Big bag of Bob's Red Mill GF oats
Various packs of instant GF oatmeal
Annie's Bunny Cookies (These will not last long)
GF choice batter - For frying (I have a wedding dress to fit into...'nough said)
Three different kinds of GF Bread Crumbs (really?!)
A giant jar of applesauce 
Two different pizza crust mixes
Two bags BRM cinnamon raisin bread mix
Three boxes of gluten free Bisquick
A box of instant potatoes (From when I made Mike a meat cake)
Two boxes of gluten free crackers (Mom + Ocean State Job Lot = Dangerous)
Two bags of powdered sugar (huh?)
Glutinous rice (no, this does not contain gluten)
Long grain brown rice
Polenta
Quinoa
Millet
Wild rice
Long grain white rice (B/c Mike hates fun)
FOUR bags of corn pasta I never plan on eating but feel bad about throwing away
A huge jug of protein powder
More spices than a Turkish bazaar

I will not punish you with a full list. The one above is bad enough, but you get the drift. This stuff needs to get used so it doesn't get "it's from the old place" stigma and get wasted. So, what's a girl to do? 

Get creative. So far, I plan on eating oatmeal for breakfast pretty much every day this week and probably next. As for the rest of the meals, I'm not sure yet. I'm hoping Google will help me out with this and if any of them come out ok, I'll post about them.

Anyone have any interesting ideas for how to use some of this up? 

Anyone like corn pasta ?
Seriously, if you like it and want it, I will send it to you for free. I just hate wasting stuff. E-mail me and it's yours.

  2. So far, we've already made chicken parm and baked pork chops and we still have bread crumbs galore! Next up, mini pizzas with all the pizza mix we have and maybe a few rounds of lentils and brown rice. Yum!
